Can the gain be adjusted via hardware, e.g. not just in software? No, there are no controls on the adapter itself. If not, will it distort when using binaural mics? This is difficult to give an accurate answer without knowing the sensitivity of your microphones and the maximum sound pressure level (SPL) you will be experiencing. Normally, if you are using a low sensitivity microphone (one that is designed for capturing high sound pressure levels), and you are powering the microphones in such a way that they can handle those high sound pressure levels, then you should not have any problems with distortion. However, if the output of the microphones is very high, then you would need to use an attenuator cable between your microphones and the adapter to avoid overloading the adapter microphone preamplifier.
